Medifast Meals PB & Fudge Ice Cream April 22, 2013

wpid-IMG_20130402_210656.jpgI have been racking my brain on how to make ice cream without an ice cream maker. I figured it out. I think that’s one of the things I love about this plan. The problem solving to gain variety. A daily sense of accomplishment.

Ingredients;

1 Medifast Meal Peanut Butter Soft Serve, made
1 Medifast Meal Hot Cocoa mix
3 tablespoons Cold Water
2 Ice Trays
Blender

Directions;

Make the soft serve as directed. Using a spoon, plop it all into an ice tray equally and put in the freezer. In a small bowl combine the water and the cocoa mix well. Using a spoon, plop this mixture into another ice tray equally. Freeze both for a few hours. When you are ready for ice cream, pull them out and let them sit for 15 minutes or so. Place half of each into the blender and mix til ice cream consistency. Put the rest in the freezer until you are ready for ice cream again. Enjoy.

Medifast Meals Soft Serve Cookies

imageI was making a soft serve one day, and as I was on my last blend, the darn thing broke. I was left with a bunch of soft serve packets and no way to make them. I looked online and found a recipe for these cookies. The recipe I found said it made 7 cookies. But, as you can see, it made 12 for me. She also said to use parchment paper and I thought my non-stick pan would work. Man they stuck to the pan like crazy. So definitely go with the parchment paper. And they are better cold, or frozen and very filling.

Ingredients;

1 Medifast Soft Serve (any flavor)

1/2 teaspoon baking powder

2 tablespoons of Egg Beaters

3 tablespoons of water

Directions;

Heat oven to 350. Dump all ingredients into a bowl. Mix well. Let sit for a few minutes. It will thicken as it sits. Drop onto parchment paper on a cookie sheet and bake for 12 minutes.

1 Serving, 1/2 Condiment, 1/2 oz. Lean
