wpid-wp-1359101410036.jpgYes, that’s right, there IS a way to have spaghetti on the plan. Please don’t be fooled by the ingredients. They seem gross, but it turned out amazing. My son even asked why we haven’t been eating spaghetti this way our whole lives. He was really happy with it as well. So here goes. We made a big batch and separated it into portioned meals.


1 Spaghetti Squash
4 servings Spaghetti Sauce
Meat of Choice (we used Boca Flamed Grilled Burgers, then Chicken Breasts the second day)


So, spaghetti squash it pretty hard to cut through. I found a solution to this. I used a large serrated bread knife and sawed it into quarters. It was much easier. Use a spoon to dig out the seeds and veins. Boil the squash for awhile. I boiled the quarters for 20 minutes and they didn’t turn into mush. While it is boiling, pour tomato sauce cans into a small pot and add seasonings to taste, making a spaghetti sauce. The flavor will not take right away. Once boiled, covered, on low for awhile, that seasonings will blend well. Cook meat plain as desired. When we used the Boca burgers, the flame grill flavor of them was amazing mixed together. Remember, with the Boca burgers, you get two patties as a portion. This is great for when you need to split the Lean & Green into two meals on long days because it is very filling. So, once the squash is cooked, spoon it out of the rind and press the water out of it in a collander. Then place 1 cup squash, 1/2 cup sauce and the allowed portion for meat into each plastic container and enjoy spaghetti when desired. A great hearty Lean & Green meal.
