1 1/2lbs Ground Turkey 93% Lean
1 cup Shredded Low-Fat Cheese
4 Green Peppers
2 cups Raw Shredded Cauliflower
1 cup Diced Tomato
1 teaspoon Onion Powder
2 teaspoons Italian Seasoning
1 teaspoon Kosher Salt
Heat oven to 375. Shred and measure 1 cup of cauliflower and place into a large bowl. Set aside. Cut green peppers lengthwise and remove all seeds and stem stuff. Boil 3 minutes then drain well and place into a casserole. You should have 8 pieces. Dice up your tomato and add italian seasoning and salt into a small bowl and let sit. Cook meat with onion powder into crumbles. Add tomato mixture to meat and cook til excess moisture boils off. Now, going back to the large bowl, add 1/2 cup cheese and 6 ounces weighed of meat mixture. Mix well. This mixture should be divided into four pieces of green pepper. I found that it was hard to pack the stuff in, but press hard, it will work. Then mix the rest into your now empty bowl and divide into remaining peppers. Bake 15 minutes. Your serving for one entire meal is two halves. You will have to add your healthy fats.
