These ended up messy, but quick and easy. It should be noted that this recipe does not complete the Lean, Green, nor the Healthy Fat portion. You will have to adapt and add as you wish to make it a full Lean & Green Meal. I added a cup of lettuce for a salad and 10 olives. Then later added remaining parts to a soup. I found that this is a meal that works well when you have to split your lean and green. Just omit the cheese and have four subs!
6 Turkey Meatballs (I found mine at Target, make sure they are the plain ones) (1/2 Lean)
1 ounce Low-Fat Mozzarella Cheese Shredded (1/4 Lean)
2 leaves Romaine Lettuce (1/2 Green)
1/4 cup Walden Farms Tomato Basil Pasta Sauce (1 Condiment)
Warm up the meatballs in the microwave for 2 minutes. Place 1 tablespoon of sauce on each lettuce leaf. Measure your cheese. Add a bit of cheese to each leaf. Place the meatballs 3 to a leaf. Top with remaining sauce and cheese. Viola!
