This is an adaptation of another recipe found online. In this version, I make my own spaghetti sauce for the lasagna. This recipe does not include the healthy fats. Please make sure to include them in your meal.
2 cups Roma Tomatoes, diced
2 teaspoons Italian Seasoning
1/4 teaspoon Garlic Powder
1/4 teaspoon Salt
1/4 teaspoon Red Pepper Flakes
2 cups Green Beans, cut style, canned & drained
3/4 cup Cottage Cheese 1%
6.6 ounces part skim Mozzarella Cheese 2%
Set oven to 350 degrees. Dice tomatoes small and microwave 1 minute. Place tomatoes and spices in blender and puree, making spaghetti sauce. In a loaf pan, pour the drained green beans into and even out. Pour cottage cheese evenly over the green beans. Pour spaghetti sauce over green beans and cottage cheese evenly. Top with mozzarella. Bake 20-25 minutes. Cut in half. One half is one serving.
