1 Head Cauliflower, equally 4 cups cooked
1 cup Green Onions
1 cup Snow Peas, fresh
4 teaspoons Low-Sodium Soy Sauce
1 pound Ham
1 cup Egg Beaters
10 sprays Cooking Spray (Pam)
Shred cauliflower and boil as “rice”. Spray a large frying pan or wok with the non-stick spray. Heat to medium. Pour egg mix into pan and fry til almost done. Chop the ham into bite size pieces and add to the pan and fry for a few minutes. Add the peas and onions and fry til the peas slightly soften. Add the drained cauliflower and soy sauce and mix well. Cook on medium-high for 8 minutes. Enjoy!
