Fried “Rice” April 6, 2013

wpid-IMG_20130316_224919.jpgAs soon as the phone was updated and ham was added to the list, I had to make fried rice. This was a staple of my childhood.


1 Head Cauliflower, equally 4 cups cooked
1 cup Green Onions
1 cup Snow Peas, fresh
4 teaspoons Low-Sodium Soy Sauce
1 pound Ham
1 cup Egg Beaters
10 sprays Cooking Spray (Pam)


Shred cauliflower and boil as “rice”. Spray a large frying pan or wok with the non-stick spray. Heat to medium. Pour egg mix into pan and fry til almost done. Chop the ham into bite size pieces and add to the pan and fry for a few minutes. Add the peas and onions and fry til the peas slightly soften. Add the drained cauliflower and soy sauce and mix well. Cook on medium-high for 8 minutes. Enjoy!

4 Servings, 2 cups per serving
Lean & Green, 1 Lean, 3 Greens, 3/4 Condiment

  1. Sounds like it is worth a try. Have you made ‘mashed potatoes’ out of cauliflower? It is actually pretty good 🙂 Kids even had a hard time telling the difference
