3 large Tomatoes
1 cup Cauliflower, shredded
1/2 cup Green Onions, chopped
14 ounces Canned Tuna, drained well
3/4 cup 1% Cottage Cheese
3 ounces Low-Fat Shredded Cheese
3 teaspoons Basil
Heat the oven to 350 degrees. Turn the tomatoes on their side and cut just a little off the bottoms. This makes them sit flat. Cut the tomatoes in half and remove just the hard parts of the pulp. Place the seeds in a bowl. Combine everything else in the bowl. Stuff the tomatoes with the mixture. I ended up with a ton of stuffing left over. I placed it on the side in the casserole dish. Place tomatoes in a casserole. Bake 45 minutes. Makes 3 servings. When serving, be sure to include 1/3 of the mixture left over in the dish. Enjoy.
