Oh my word, this is a heavenly dish. It doesn’t complete your Lean so I added 1 1/2 eggs on the side. I also added 1 1/2 ounces avocado as well. That would give you 2 Healthy Fats in the end if you did it that way.
4 Poblano Peppers
1 cup Green Onions, chopped
4 wedges Light Laughing Cow Garlic & Herb Cheese
4 teaspoons Sour Cream
4 ounces Low-Fat Cheese, Mexican Blend
1/2 cup Egg Beaters
1/2 teaspoon Mrs. Dash Fiesta Lime
Heat oven to 375 degrees. Place parchment paper in the bottom of a casserole dish. Otherwise it will stick greatly. This also prevents the need for non-stick spray. Cut the stem end off the peppers and gut them. Remove the seeds and pulp. Put the laughing cow cheese and sour cream in a bowl and microwave for 45 seconds. Remove from microwave and combine everything else. Mix well. Stuff the peppers with the cheese mixture. Bake uncovered for 45 minutes.
