Chamoru Fiesta Lean & Green Meal May 7, 2013

wpid-IMG_20130405_191149.jpgMissing Guam, I just had to come up with these recipes. I actually used it as a reward for losing 50 pounds. Turned out soo good. Not exact but very close. This has me excited to try more recipes from our time on Guam. There are 3 recipes here for each portion.

KELAGUEN (KADON)….eaten cold


6 ounces Chicken Breast, baked, chopped very small
1/4 cup Green Onions, chopped
1/2 teaspoon Lemon Powder
1/4 teaspoon Salt
Dash of Red Pepper Flakes


wpid-IMG_20130405_191538.jpgMix all together and let sit in the fridge for at least an hour. Stir, serve.

1 Serving
1Lean, 1/2 Green, 2 Condiments




1 head Cauliflower, made into rice
1 teaspoon Achuete Powder
1 teaspoon Imitation Bacon Bits
1/2 cup Green Onions, chopped


Mix all together well and let sit. This will take a lot of stirring. Mine measured out to…3 3/4 cup total…but 1/2c is one serving.

Per Serving; 1 Green, 1/4 Condiment




½ cup Cucumber
1 1/2 teaspoon Low Sodium Soy Sauce – 3/4 condiment
1 ½ teaspoons Vinegar – ¼ condiment


The dietetic technician told me to break the condiments down this way. She says when there is a marinade that you remove the food from that you cut the amount of condiments consumed in half. So, cut the cucumber as shown and place everything in a plastic ware with a lid and shake well.

1 Green, 1/2 Condiment


1 Lean, 3 Greens, 2 3/4 Condiments….Still need to add a healthy fat
