1/3 cup Coconut Milk, light, canned
1/3 cup Water
1 cup Bell Peppers, sliced
1/2 cup Snow Peas, snapped in half
6 ounces Chicken Breast, cooked, diced
1/2 teaspoon Coconut Extract
1/2 teaspoon Green Curry Paste
In a medium pot, combine liquids and snow peas. Cook medium 10 minutes. Add remaining ingredients and water to cover. Cook medium for 20 minutes. The whole pot is one serving.
