Meatloaf May 30, 2013

wpid-IMG_20130430_012121.jpgMy son asked for meatloaf and I noticed that I still had crackers left from my Medifast meal snacks. So here goes.


2 pounds Ground Beef 93% Lean
2 packages Medifast Crackers
1/2 teaspoon Pepper
1 teaspoon Imitation Bacon Bits
1 teaspoon Mrs. Dash Steak Seasoning
4 tablespoons Walden Farms Ketchup
1/4 cup Egg Beaters


Heat oven to 375 degrees. Crush crackers into a large mixing bowl. Add everything but the ketchup. Mix well. Place in a loaf pan. Cover with the ketchup. Bake one hour. Mine made 5 servings. But make sure to measure out 5 ounces as one serving.

Lean & Green per serving; 1 Lean, 2/5 Snack, 2 Condiments
