Here is a great recipe. Great for when you are no so hungry but still need to get in your Lean & Green meal. It doesn’t make much, but is good. Pictured is the enchiladas, and 1 ounce of avocado mixed with a tablespoon of salsa.
2 Cabbage Leaves, medium
1 Roma Tomato
1 teaspoon Chili Powder
1/4 cup Green Onions, chopped
4 ounces Low-Fat Mexican Blend Cheese, shredded
Heat oven to 375 degrees. Place cabbage leaves in a pot and cover with water. Boil til soft. Drain and run cool water over them. Chop the tomato and microwave 1 minute. Place in a blender and blend with the chili powder. In each cabbage leaf, place 1/2 the cheese and onions and just a dab of the tomato mixture. Close up and place face down in a oven safe dish. Cover in remaining tomato mixture. Bake 30 minutes and enjoy.
