Twice Baked “Potatoes” July 26, 2013

wpid-IMG_20130708_203538.jpgSo excited they added turkey bacon to the approved Lean list. You will love this one. You will notice from the picture that I used purple cauliflower.

Ingredients;

3 cups Cauliflower, chopped
5 ounces Jennie-O Turkey Bacon
6 ounces Low-Fat Cheese
4 teaspoons Sour Cream

Directions;

Heat oven to 350. Place in this order, the cauliflower, then the bacon on top, then the cheese on top of that. Bake 30 minutes. Top with a teaspoon on sour cream and enjoy.

2 Servings
Lean & Green per serving; 1 Lean, 3 Greens, 2 Condiments

wpid-IMG_20130627_210756.jpgOnce I got used to the idea of using almond milk, I had to make this. It’s very good. I only make a serving at a time. The picture shows one serving….2 bowls!

Ingredients;

5 ounces Ham, cooked, chopped
2 cups Silk Almond Milk, unsweetened, vanilla
1 cup Cauliflower, chopped
1/2 cup Green Onions, chopped

Directions;

Gather all ingredients and place in a medium pot. Cook on medium for 20 minutes.

Medifast Meals Berry Smoothie July 22, 2013

Ingredients;

1 Medifast Meal Strawberry Shake
1 tablespoon Walden Farms Blueberry Spread
1 tablespoon Walden Farms Raspberry Spread
4 Ice cubes
1 cup Water, COLD

Directions;

Toss everything in a blender and blend til the ice is all dissolved. Very yummy.

Stuffed Philly Cheesesteak Peppers July 18, 2013

Ingredients;

1 Green Pepper
1/2 cup Mushrooms, sliced
3 1/2 ounces Beef Steak, sliced very thin, cooked weight
2 ounces Reduced Fat Cheese

Directions;

Heat oven to 350 degrees. Slice the pepper in half and gut it. Cook the meat and mushrooms in a frying pan til the meat is just cooked. Place half the cheese in the bottom of the peppers and place the meat mixture into the peppers next. The top with remaining cheese. Bake 25 minutes. Enjoy!

Ingredients;

1 Medifast Meals Vanilla Pudding
1 cup Silk Pure Almond Milk, unsweetened, vanilla
4 Ice Cubes

Directions;

Mix all in a blender and mix til smooth.

Medifast Meals Alfredo Pizza July 14, 2013

wpid-IMG_20130701_040557.jpgWhen they discontinued the cream of tomato soup, I had to do something to continue eating pizza. So I ordered some cream of chicken soup and tried the same thing and it turned out great!

Ingredients;

1 Medifast Meals Cream of Chicken Soup mix
1/4 teaspoon Baking Powder
3 tablespoons Water
2 tablespoons Walden Farms Alfredo Sauce
2 tablespoons Parmeasan Cheese
Parchment Paper

Directions;

Mix the soup and baking powder well. Add the water and mix. Heat oven to 400 degrees. Pour mixture onto parchment paper and cook 7 minutes. Pull out of oven and spread the alfredo sauce then top with the cheese. Bake 6 minutes. Remove from oven and enjoy!

Crockpot Twice Baked “Potatoes” July 12, 2013

Ingredients;

3 cups Cauliflower, chopped
5 ounces Jennie O Turkey Bacon
6 ounces Reduced Fat Cheese, your choice
1 cup Silk Pure Almond Milk, unsweetened or vanilla

Directions;

Chop up bacon. Mix all in a crockpot and cook low for 8 hours. The time may be less depending on the crockpot. Check the consistency of the cauliflower.
