Medifast Meals Baked BBQ Casserole April 9, 2013

wpid-IMG_20130318_221426.jpgI really like the BBQ Bites, but find that they dry out my mouth real bad. I also sometimes get tired of eating them as there are so many in one package. So I figured this recipe out.

Ingredients;

1 Medifast Vegetarian Sloppy Joe mix
1 Medifast BBQ Bites package
1 teaspoon BBQ Sauce

Directions;

Heat oven to 350 degrees. Make sloppy joes as directed. Divide the bites equally into to oven safe dishes. If you like, you can break them up a bit. Once the sloppy joes is done cooking, divide it equally into the two dishes as well. Place 1/2 teaspoon in to each dish and mix well. Bake for 10 minutes. Enjoy!

Medifast Meals Marshmallow Cereal Treat March 10, 2013

wpid-IMG_20130303_165306.jpgI just love rice crispy treats. So when I bought the marshmallow dip from Walden Farms, I had to try this. It turned out great!

Ingredients;

1 Medifast Meal Mixed Berry Cereal Crunch
2 tablespoons Walden Farms Marshmallow Dip

Directions;

In a bowl, mix the two well. Press into a mini loaf pan that is microwaveable. Microwave for 1 minute. Let cool completely. Enjoy!

Medifast Meals Pizza Mac March 1, 2013

wpid-IMG_20130223_041823.jpgAfter making the Medifast Meals Baked Mac n’ Cheese, I had to give this a try. It’s not that I don’t like the Pizza Bites because I do. It’s that I don’t care for the mac by itself. The Pizza Bites have a strong bread flavor to me, so this makes a great combination.

Ingredients;

1 Medifast Meals Cheese Pizza Bites
1 Medifast Meals Mac n’ Cheese
1/4 teaspoon Italian Seasoning
oven safe baking dish

Directions;

Heat the oven to 350 degrees. Make the mac n’ cheese as directed. While that is making, separate the bites into two oven safe dishes. Use a potato masher and lightly break up the bites. Or you can just cut them in half, but I find the masher to be quicker. Don’t break them up too small though. Add half the cooked mac into each dish. Sprinkle each dish with 1/8 teaspoon of Italian seasoning and bake for 10 minutes. Eat one now and save the other for later. Enjoy!

Medifast Meals Baked Macaroni & Cheese February 22, 2013

wpid-IMG_20130219_013513.jpgDidn’t think it was possible did ya? This has got to be my favorite Medifast Meal combo.

Ingredients;

1 Medifast Meal Mac n’ Cheese
1 Medifast Meal Parmesan Cheese Puffs
1/4 cup Low-Fat Cheese (optional)

Directions;

Heat oven to 350 degrees. Make the mac n’ cheese as directed. Gather two oven safe containers. Separate the puffs into the two containers. Cut each puff in half. Separate the mac n’ cheese into the two containers. Mix well. Top each with a pinch of cheese. (optional) Bake 10 minutes. It softens the puffs and adds a great flavor.

2 Servings
2 Medifast Meals = 1 Meal, 1/2oz. Lean (optional)

Medifast Meal Hearty Chili January 15, 2013

wpid-IMG_20130212_040259.jpgYou know those Chili Cheese Puffs? They are good and all, I just get tired of the flavor. It also takes too long to eat. So, I came up with this concoction. It was really good.

Ingredients;

1 Medifast Chili meal

1 Medifast Chili Cheese Puffs meal

1 teaspoon of Hot Sauce

Dash of Mrs. Dash Fiesta Lime seasoning

Directions;

Make the Chili as directed. Separate into two reusable plastic containers. Add 1/2 teaspoon of Hot Sauce and a dash of Mrs. Dash to each container. Cover, and put one with 1/2 Chili only in the fridge. Separate the Chili Cheese Puffs and put 1/2 in a plastic bag. Put the other half in the first bowl of Chili.  Mix the first bowl. I let it sit a bit. Then enjoy. When you want the other half, just warm the second container and add the Chili Cheese Puffs.

I count this as a main dish.

Medifast Meal Haystacks

wpid-wp-1359097366618.jpgSo, I didn’t care for the Pretzels at all. Something about the texture just is gross. So, I looked online and found a recipe for Haystacks.

Ingredients:
1 Medifast Brownie Mix
1 Medifast Cinnamon Pretzel Sticks, crushed
3 tbsp water
2 tbsp PB2, made up
Directions:
Crush the pretzels by opening one side of the bag and squeezing the bag to form crumbs. In a small bowl, combine brownie mix with 3 tbsp of water to form a paste. Add 2 tbsp PB2 and stir until combined. Add the crushed pretzels to the mixture and stir making sure the pretzels are evenly coated. Drop the haystacks into two plastic ware containers forming 8 piles. Freeze for at least 30 minutes to an hour.
2 Servings
2 Medifast Meals, 1/2 Snack per Serving
It doesn’t say this, but you will have to eat them while they are frozen. If they thaw out, they get mushy. Also, if they are stored in plastic ware, flexing the bottom will loosen them from the container. I’m sticking this is the desserts category.
