“Fried” Zucchini July 2, 2013

wpid-IMG_20130609_213300.jpgAfter making fried mushrooms, I had to make these.

Ingredients;

1/2 cup Zucchini, sliced
2 teaspoons Flax Seed, ground
2 tablespoons Egg Beaters

Directions;

Heat oven to 425. Run each slice  of zucchini through the egg then the flax. Place on a cookie sheet and bake for 20 minutes.

1 Serving
1 Green, 2 Condiments

Ingredients;

2 Mushrooms, cut in half
1 teaspoon Flax Seed, ground
1 tablespoon Egg Beaters

Directions;

Heat oven to 425. Roll mushrooms in egg then flax. Bake 20 minutes. Yum!

1/2 Green, 1 Condiment

Mashed “Potatoes” & Gravy April 2, 2013

wpid-IMG_20130310_154951.jpgYou wouldn’t think cauliflower could be so good, but this is amazing people!

Ingredients;

1 Head of Cauliflower
3/4 teaspoon Black Pepper
3/4 teaspoon Garlic Powder
1 Medifast Brown Gravy

Directions;

No need to shred the cauliflower. Cut all but the large stem up into small pieces. Boil til mushy. Make gravy as directed. Set aside. Drain the cauliflower and press out the water while in the colander. Place cauliflower back into the pot and using a masher, mash it up really good. Measure out your cauliflower. Mine measured out to 6 servings. Mix in the seasonings and let sit a few minutes. This helps the seasonings soak in. Stir and measure out. Shown in the picture is two servings.

6 Servings
Per 1/2 cup Serving = 1 Green, 1/2 Condiment

Medifast / TSFL Approved Spaghetti Sauce March 2, 2013

A lot of the recipes I found called for spaghetti sauce. Everywhere I looked there were added sugars to it. So I wrote the Dietetic Technician and asked where to find this spaghetti sauce everyone is talking about. She said “Please recommend either homemade spaghetti sauce or Walden Farms”. Then she gave me a recipe for homemade sauce to share. So here’s the breakdown. You have two options for spaghetti sauce.

1. Walden Farms Tomato & Basil Pasta Sauce (available here) = 1/4 cup is 1 Condiment
2. Homemade Sauce from scratch, see below recipe for details.

Ingredients;
1 Roma Tomato
1 teaspoon Italian Seasoning
1/8 teaspoon Garlic Powder
1/8 teaspoon Red Pepper Flakes
1/8 teaspoon Salt

Directions;
Chop tomato into small pieces, put in a microwave-safe bowl, and microwave for 1 minute on High. Transfer tomatoes into blender, add Italian seasoning, garlic powder, red pepper flakes, and salt to taste. Blend on high until smooth. Transfer back to bowl, and microwave for 1 additional minute on High.

“Rice” February 7, 2013

Rice was used all the time at my house. So with experimentation, “rice” was born.wpid-IMG_20130205_223745.jpg

Ingredients:

1 Head of Cauliflower

Directions;

Chop off the leaves and most of the stems. Grate the heads. I used a hand cranked grater, but a food processor would work too. Dump into a large pot and boil to desired tenderness. Be careful, it tends to boil over easy even with two inches of room at the top. So keep stirring and turn down the heat once boiling. Drain. I used a hand wire strainer as the tiny rice would have gone through my colander. Press out the water with a spoon. Viola! “Rice”

Makes Several Servings
Green; 1/2 cup is one serving

This recipe has no additives. Approved.
