Meatloaf May 30, 2013

wpid-IMG_20130430_012121.jpgMy son asked for meatloaf and I noticed that I still had crackers left from my Medifast meal snacks. So here goes.

Ingredients;

2 pounds Ground Beef 93% Lean
2 packages Medifast Crackers
1/2 teaspoon Pepper
1 teaspoon Imitation Bacon Bits
1 teaspoon Mrs. Dash Steak Seasoning
4 tablespoons Walden Farms Ketchup
1/4 cup Egg Beaters

Directions;

Heat oven to 375 degrees. Crush crackers into a large mixing bowl. Add everything but the ketchup. Mix well. Place in a loaf pan. Cover with the ketchup. Bake one hour. Mine made 5 servings. But make sure to measure out 5 ounces as one serving.

Fried Chicken May 16, 2013

Ingredients;

1 ounce Low-fat Mozzarella, shredded
7.5 ounces Chicken Breast, raw
1 1/2 teaspoon Flax Meal
1/4 teaspoon Black Pepper
1 teaspoon Olive Oil
Spray Bottle

Directions;

Heat oven to 425 degrees. Chop Chicken into thick strips. In a plastic baggie, combine cheese, chicken, flax meal and pepper. Shake a lot. Place on a cookie sheet. Spray with oil. Bake 25 minutes.

wpid-IMG_20130419_202215.jpgMy son had a craving for Kung Pao Chicken so I came up with this. It’s pretty good and easy to do.

Ingredients;

2 teaspoons Flax Seed Meal
9.1 ounces Chicken Breast, raw
1/4 teaspoon Crushed Red Pepper
1 teaspoon Low-Sodium Soy Sauce

Heat a skillet or wok to medium. Chop chicken to bite-size pieces. In a plastic bag, combine the flax meal, chicken and red pepper. Shake up a lot. Cook in skillet with soy. Viola!

Chicken Cordon Bleu March 28, 2013

wpid-IMG_20130310_155116.jpgAs soon as I noticed on the phone application and discovered that ham was now on the Lean list, I knew I had to try this. It turned out so yummy.

Ingredients;

8ounces Chicken Breast, raw
1 ounce Ham, thinly sliced
1 wedge Laughing Cow Cheese, Swiss

Directions;

Heat oven to 400 degrees. Split your chicken in half making two thin pieces from one thick piece. Pound your chicken pieces to tenderize. Place half your ham on one piece of chicken and the other half on the other. Cut your wedge of cheese in half and place on each piece. Roll up each piece of chicken and place face down in your oven safe baking dish. Bake for 40 minutes. Enjoy!
