Medifast Meals Berry Bars June 5, 2013

Ingredients;

1 Medifast Meals Strawberry Crunch Bar
1 Medifast Meals Blueberry Oatmeal
1/2 teaspoon Baking Powder
2 tablespoons Walden Farms Raspberry Fruit Spread
1/2 cup Water
Parchment Paper

Directions;

Unwrap the bar and place upside down in a bowl and microwave for 30 seconds. Break up quickly with a scraper. Add the oatmeal, water, and baking powder and mix quickly. Place on the parchment paper and shape into desired shape. Top with fruit spread. Microwave for 3 minutes. Divide in half and enjoy half as a meal.

Medifast Meals Maple & Brown Sugar Oatmeal Crunch April 24, 2013

wpid-IMG_20130402_172621.jpgThis may not appeal to everyone, but I loved it. It seems to me that the cereal crunch is a bit sweeter than the oatmeal, so this made a great combo in my opinion.

Ingredients;

1 Medifast Meal Maple & Brown Sugar Oatmeal mix
1 Medifast Meal Maple & Brown Sugar Cereal Crunch
¾ cup Water

Directions;

Make the oatmeal with the water. Don’t worry if it is runny, the cereal absorbs it. Split the cereal crunch in half. Use ½ the oatmeal with ½ the cereal and mix well. Save the rest for another time. Enjoy.

Medifast Meals Smores Bars March 26, 2013

wpid-IMG_20130311_000946.jpgThis is made in two parts and combined. Makes two meals and should be eaten straight out of the freezer. I tried toasting the marshmallow but it just started melting the chocolate and never did any good, so I stopped. It might be good warmed up, but I will leave that to you. Pretty darn good, if I do say so myself.

Ingredients;

1 Medifast Meal Hot Chocolate mix
3 tablespoons COLD Water
1 Medifast Meal Oatmeal
1/2 teaspoon Cinnamon
1 tablespoon Egg Beaters
2 tablespoons Chocolate Sugar-Free Syrup
3 tablespoons Water
2 oven safe dishes that are the same size
parchment paper
2 tablespoons Walden Farms Marshmallow Dip

Directions;

Heat the oven to 350 degrees. Place parchment paper in the bottom of each dish. Mix the hot chocolate mix and 3 tablespoons of water in a small bowl well. Pour into one dish and place in the freezer. Freeze for one hour. In another bowl, mix the oatmeal, cinnamon, egg beaters, syrup and 3 tablespoons water. Let it sit for five minutes. Pour into the other dish and bake for 12 minutes. Let cool really well. Remove from dish and place on a plate. Get chocolate from freezer and place on top of oatmeal bar. Top with marshmallow dip and spread to cover. Cut in half and freeze separately.

Per Serving = 1 Medifast Meal, 1 1/2 Condiment

Medifast Meals Blueberry Oatmeal Muffins March 22, 2013

These turned out okay. Nowpid-IMG_20130309_213958.jpgt exactly what I expected, but very filling.

Ingredients;

1 Medifast Meal Blueberry Oatmeal mix
1/4 teaspoon Baking Soda
1/8 teaspoon Baking Powder
1/3 cup Water
1 teaspoon White Vinegar

Directions;

Heat oven to 350 degrees. Mix dry ingredients in one bowl. In your measuring cup, measure 1/3 cup water. Add the vinegar to this. Combine the two and quickly fold to just mixed. I poured mine into three muffin cups, but it probably could have done well in two. Bake 16 minutes. Enjoy warm or cold.

Medifast Meals Oatmeal Cookies March 20, 2013

wpid-IMG_20130309_212525.jpgI used blueberry oatmeal for this recipe and it seemed like it needed a bit more sweetness or blueberry flavor. But, still good and makes five cookies as one serving!

Ingredients;

1 Medifast Meal Oatmeal (any flavor works)
1/3 cup Water
1/8 teaspoon Baking Powder
1/2 teaspoon Vanilla Extract
Parchment Paper

Directions;

Heat oven to 350 degrees. Mix everything in a bowl. Let sit for five minutes. Place parchment paper on cookie sheet. Using a scraper, make 5 cookies on the paper. Bake 15 minutes.

Medifast Meals Frozen Banana Cream Pie February 21, 2013

wpid-IMG_20130219_014304.jpgwpid-IMG_20130220_141512.jpgI saw a recipe online talking about single serving pies. So it made sense to me to make a big pie so I can have loads of servings. I’m all about having quick meals on hand. Not having to mix before eating makes it easier for me. This is why spend a few hours on a day off just cooking. This way I can just go to the freezer and grab something and go.

Ingredients;

2 Medifast Meals Maple & Brown Sugar Oatmeal
4 Medifast Meals Banana Pudding
1 teaspoon Baking Powder
Pie Plate

Directions;

Heat oven to 350 degrees. In a bowl, mix oatmeals, baking powder and 1/4 cup + 2 tablespoons of water. Mixture will be crumbly. Press into a pie plate that has been sprayed with non-stick spray. Bake for 15 minutes. Cool completely. In another bowl, make the pudding. Pour over crust and push around with your spoon. Freeze for 2 hours. Cut into 6 slices and enjoy as desired.
