1 teaspoon Flax Seed, ground
1 tablespoon Egg Beaters
2 Jalapenos
1 wedges Light Laughing Cow Cheese


Heat oven to 425. Cut the stem off. Scrape out the seeds and veins. Stuff with 1/2 a wedge of cheese. Roll in the egg, then roll in the flax seed. Repeat. Bake 20 minutes. Eat in small portions, it may be too spicy.

1/2 Green, 1/2 Healthy Fat, 1 Condiment

Mini Raspberry Cheesecake April 19, 2013

wpid-IMG_20130402_185425.jpgI have this problem. I continually forget to add healthy fats to my meals. So I make these and put them in single serve containers. Here is the recipe for one serving and it’s only 70 calories for the whole thing.


2 wedges Light Laughing Cow Cheese, your choice
1 tablespoon Walden Farms Raspberry Fruit Spread, or any fruit spread


Super easy guys. Just put the wedges in a small container and spread the fruit spread overt the top. Chill in the fridge. Enjoy when you forget to add your healthy fats to your Lean & Green
