wpid-IMG_20130617_210023.jpgI know Medifast just came out with a berry smoothie, but I came up with this one on my own.

Ingredients;

1 Medifast Meal Strawberry Shake
1 tablespoon Walden Farms Blueberry Spread
1 tablespoon Walden Farms Raspberry Spread
4 Ice cubes
1 cup Water, COLD

Directions;

Toss everything in a blender and blend til the ice is all dissolved. Very yummy.

Medifast Meals Peanut Butter Fudge Shake June 1, 2013

Ingredients;

1 Medifast Meals Peanut Butter Soft Serve mix
1 Medifast Meals Hot Cocoa mix
1 cup Water
8 Ice Cubes
3 tablespoons Water

Directions;

First make fudge my mixing the 3 tablespoons water and cocoa mix and place in an ice tray in the freezer for an hour. Then mix the soft serve with the cup of water and divide in half. Save in the fridge for later. Once the fudge in frozen. Place half the fudge and half the soft serve mix in a blender with 4  ice cubes. Mix and enjoy. Add more water if needed.

Ingredients;

1 Medifast Meal Hot Cocoa
2 tablespoons Sugar-Free Kahula Syrup
1 1/2 cups Hot Coffee

Directions;

Mix all together and enjoy. So very good!

Medifast Meals PB & Fudge Ice Cream April 22, 2013

wpid-IMG_20130402_210656.jpgI have been racking my brain on how to make ice cream without an ice cream maker. I figured it out. I think that’s one of the things I love about this plan. The problem solving to gain variety. A daily sense of accomplishment.

Ingredients;

1 Medifast Meal Peanut Butter Soft Serve, made
1 Medifast Meal Hot Cocoa mix
3 tablespoons Cold Water
2 Ice Trays
Blender

Directions;

Make the soft serve as directed. Using a spoon, plop it all into an ice tray equally and put in the freezer. In a small bowl combine the water and the cocoa mix well. Using a spoon, plop this mixture into another ice tray equally. Freeze both for a few hours. When you are ready for ice cream, pull them out and let them sit for 15 minutes or so. Place half of each into the blender and mix til ice cream consistency. Put the rest in the freezer until you are ready for ice cream again. Enjoy.

Medifast Meals Party Punch April 7, 2013

wpid-IMG_20130318_165907.jpgThe drink mixes just don’t taste good in just water. When I came up with this one, it tasted just the punch my mom made for my birthday parties when I was a kid. Hope you enjoy it.

Ingredients;

1 Medifast Tropical Fruit Drink mix
1 can Diet Orange Soda

Directions;

Pour the soda into a tall glass. I emphasize tall because it foams up a whole lot. Pour the drink mix in the glass and let sit for a few seconds.  Using a knife or spoon, slightly stir it. There will be chunks. Let sit a few minutes. Stir the rest of the way to mix well. I let it sit one more time. Enjoy!

Medifast Meals Marshmallow Fudge April 4, 2013

Ingredients;

1 Medifast Meal Hot Chocolate mix
3 tablespoons COLD Water
1 tablespoon Walden Farms Marshmallow Dip

Directions;

In a small bowl, mix the hot chocolate mix and water well. Add the marshmallow dip and mix a little. Drop into an ice tray and freeze for a couple hours. Enjoy!

Medifast Meals Raspberry Fudge April 3, 2013

wpid-IMG_20130310_235158.jpgFruity fudge, who can resist? This turned out well. It has a slight raspberry flavor. Keep in mind that this will need to eaten while it’s frozen. The picture shows one serving.

Ingredients;

1 Medifast Meal Hot Chocolate mix
3 tablespoons Water
1 tablespoon Walden Farms Raspberry Fruit Spread

Directions;

Mix the water and hot chocolate mix well. Add the fruit spread. The spread will not break up completely, but that’s fine. Drop into an ice tray. Freeze for a couple hours. Enjoy!

Medifast Meals Smores Bars March 26, 2013

wpid-IMG_20130311_000946.jpgThis is made in two parts and combined. Makes two meals and should be eaten straight out of the freezer. I tried toasting the marshmallow but it just started melting the chocolate and never did any good, so I stopped. It might be good warmed up, but I will leave that to you. Pretty darn good, if I do say so myself.

Ingredients;

1 Medifast Meal Hot Chocolate mix
3 tablespoons COLD Water
1 Medifast Meal Oatmeal
1/2 teaspoon Cinnamon
1 tablespoon Egg Beaters
2 tablespoons Chocolate Sugar-Free Syrup
3 tablespoons Water
2 oven safe dishes that are the same size
parchment paper
2 tablespoons Walden Farms Marshmallow Dip

Directions;

Heat the oven to 350 degrees. Place parchment paper in the bottom of each dish. Mix the hot chocolate mix and 3 tablespoons of water in a small bowl well. Pour into one dish and place in the freezer. Freeze for one hour. In another bowl, mix the oatmeal, cinnamon, egg beaters, syrup and 3 tablespoons water. Let it sit for five minutes. Pour into the other dish and bake for 12 minutes. Let cool really well. Remove from dish and place on a plate. Get chocolate from freezer and place on top of oatmeal bar. Top with marshmallow dip and spread to cover. Cut in half and freeze separately.

Per Serving = 1 Medifast Meal, 1 1/2 Condiment

Medifast Meals Frozen Peanut Butter Cups February 24, 2013

wpid-IMG_20130221_175119.jpgWhen I saw a recipe for something similar, I had to try my own version. Peanut butter cups were my favorite candy.

Ingredients;

1 Medifast Meal Hot Chocolate
3 tablespoons Water
2 tablespoons Walden Farms Peanut Spread (1 Condiment)

Directions;

Mix hot chocolate mix and water til it becomes a paste. Pour half into a silicone cup, or something that it would be easy to get it out of once frozen. Place the peanut spread in the middle. Top with the remaining chocolate mixture. Freeze for at least one hour. Enjoy!

Medifast Meal Mock Mimosa February 13, 2013

wpid-IMG_20130212_144709.jpgSo, I kept trying the Cranberry Mango Drink and just couldn’t get it to turn out right. It would be grainy, or taste like a funny shake. It wasn’t cool. I tried this and it turned out like a mimosa. It is very foamy, but even the foam is yummy.

Ingredients;

1 can Diet Lemon-Lime Soda
1 Medifast Meal Cranberry-Mango Drink

Directions;

In your shaker, combine the drink mix and about 1/4 cup of soda and shake well. Let sit for a minute to help dissolve and shake once more. Pour into a glass. I did it in a wine glass. Kinda felt elegant. Pour in the rest of soda. I only put enough soda to fill the glass. Then, when the glass was half drank, I added the rest. Very good.
